辅料在清香型大曲酒酿造过程中的应用分析

摘　　要：对在清香型大曲酒酿造过程使用到的稻壳、谷糠辅料的作用,进厂标准以及使用方法进行介绍。结合辅料在酿造过程中的作用,总结合理使用辅料的酿造工艺的原则。The effect of rice husk and chaff adjunct used in the brewing of Aromatic Daqu liquor,the standard of entering the factory and the method of using were introduced.According to the function of excipients in brewing process,the principle of rational use of excipients in brewing process was summarized.
