摘  要:非糖甜味剂是一种常见的食品添加剂,因其种类繁多、来源广泛,且具有高甜度、易加工、热量低等优势,常作为代糖存在于以糖尿病患者为代表的限糖人群的主食及饮料等各类食品中。近来,随着科学研究的深入以及人们健康意识的提高,关于非糖甜味剂替代糖类的可行性和安全性争议颇多,其对机体糖代谢的影响成为研究热点。文章对近些年国内外相关科学研究进行梳理,汇总了常见甜味剂的理化性质及代谢特征,综述了常见甜味剂对血糖代谢的影响以及作用机制,以期为日后限糖人群对甜味剂及其相关制品的选择,和甜味剂的深入开发利用提供一定参考。Non-sugar sweeteners are common food additives characterized by their diverse types,wide sources,high sweetness,easy processing,and low calorie content and other advantages,they are often used as a substitute for sugar in various foods and beverages consumed by sugar-restricted populations,such as diabetic patients.Recently,with the deepening of scientific research and the improvement of people's health awareness,there has been considerable controversy regarding the feasibility and safety of non-sugar sweeteners replacing sugars,making their impact on an organism's sugar metabolism a focal point of study.In this paper,the related scientific research at home and abroad in recent years was reviewed,and the physicochemical properties and metabolic characteristics of common sweeteners were summarized.The effects and mechanism of common sweeteners on blood glucose metabolism were reviewed.It aimed to offer insights for sugar-restricted populations in their selection of sweeteners and related products,as well as to provide a reference for the further development and utilization of sweeteners.
