摘 要:目的测定山东省市售乳制品中16种微量元素的含量水平,进行元素之间的相关性研究,评估其人群暴露健康风险。方法抽取山东省市售的乳制品样品155份,经微波消解前处理后,采用电感耦合等离子体质谱仪(ICP-MS)进行检测,测得16种微量元素[包括铍(Be)、铊(Tl)、银(Ag)、镉(Cd)、锑(Sb)、铝(Al)、钒(V)、铬(Cr)、锰(Mn)、钴(Co)、镍(Ni)、铜(Cu)、砷(As)、硒(Se)、钡(Ba)、铅(Pb)]的含量水平并进行元素间相关性分析,采用人体耐受量评估法和靶标危害系数法(THQ)对其污染程度和人群健康暴露风险进行评估。结果除Be、Tl、Ag、Sb等4种元素外,其余12种微量元素在样品中均有检出,V、Cr、Mn、Co、Ni、Cu、Se、Ba等8种元素检出率为100%。检出的12种微量元素平均含量依次为Al>Mn>Ba>Ni>Cr>Cu>Se>Pb>Co>V>As>Cd;平均含量最高的三种元素为Al、Mn、Ba,其平均含量分别为0.2707、0.0678、0.0641 mg/kg。元素间的相关性分析显示产乳动物在吸收利用微量元素时V和Co以及Ni之间存在较强的协同作用(rs分别为0.82、0.86,P<0.01),而Al、Co、V、Ni与Se之间存在拮抗作用(rs分别为-0.41、-0.35、-0.45、-0.40,P<0.01)。As、Pb、Cr含量均未超过国家食品安全标准,平均每周实际摄入量(AWI)与每周可耐受摄入量(PTWI)比值为0.004%~8.384%,潜在有害元素的THQ值均小于1。结论山东省市售乳制品中16种微量元素含量符合国家食品安全标准,乳制品摄入对人群膳食暴露无明显的健康风险。Objective To determine the levels of 16 trace elements in commercially available dairy products in Shandong province,to study the correlation between the elements,and to evaluate the health risk of their exposure to the population.Methods A total of 155 samples of commercially available dairy products from 16 cities in Shandong province were detected by inductively coupled plasma mass spectrometry(ICP-MS)after microwave digestion,and the levels of 16 trace elements(Be,Tl,Ag,Cd,Sb,Al,V,Cr,Mn,Co,Ni,Cu,As,Se,Ba,Pb)were measured and analyzed by correlation analysis.The levels of 12 trace elements in the samples were analyzed by correlation analysis,and the degree of contamination and the risk of population health exposure were evaluated by human tolerance assessment and target hazard coefficient(THQ)method.Results In addition to 4 elements such as Be,Tl,Ag,Sb,the other 12 trace elements were detected in the samples,and the detection rate of 8 elements such as V,Cr,Mn,Co,Ni,Cu,Se,Ba was 100%.The average contents of the 12 trace elements were Al>Mn>Ba>Ni>Cr>Cu>Se>Pb>Co>V>As>Cd;the 3 elements with the highest average contents were Al,Mn and Ba,with the average contents of 0.2707 mg/kg,0.0678 mg/kg and 0.0641 mg/kg,respectively.And the correlation analysis among the elements showed that there was a strong synergistic effect between V,Co,and Ni(r_s=0.82 and 0.86,respectively,all P<0.01),while there was an antagonistic effect between Al,Co,Mn,V,Ni,Ba and Se(r_s=-0.41,-0.35,-0.45 and-0.40,respectively,P<0.01).All levels of As,Pb and Cr did not exceed the national food safety standards,and the ratios of the average actual weekly intake(AWI)to the provisional tolerated weekly intake(PTWI)ranged from 0.004%to 8.384%,and the THQ values for potentially hazardous elements were all less than 1.Conclusion The content of 16 trace elements in dairy products available for sale in Shandong province complies with national food safety standards,and there is no obvious health risk of dairy product intake on the dietary exposure of the pop
