摘  要:金耳是我国特有的食用菌,俗称脑耳,又称金木耳。金耳中最主要的活性成分之一是金耳多糖。现已被证明金耳多糖具有极高的生物活性,对人体有多方面益处,有抗氧化、降血糖、降血脂、免疫调节、抗癌、抗肿瘤、保肝护肝、止咳平喘等多种功效,具有极高的药用价值,是优质的食药两用菌。该文探讨了金耳子实体多糖、金耳菌丝体多糖及金耳发酵液多糖几种不同来源的金耳多糖结构。综述了金耳多糖的多种生物活性和对人体的作用,并对其产品的开发利用现状进行阐述。以期为深入研究开发其他领域的应用提供理论参考。Golden ear mushroom(Naematelia aurantialba)is a unique edible fungus in China,with polysac⁃charides as one of the main active components.N.aurantialba polysaccharides with antioxidant,blood glucose⁃and lipid⁃lowering,immunomodulatory,anticancer,anti⁃tumor,liver⁃protecting,cough⁃relieving,and asthma⁃relieving effects provide benefits for the human body.Accordingly,N.aurantialba is considered as a high⁃quality mushroom with both medicinal and edible values.The structures of N.aurantialba polysaccha⁃rides from different sources,including fruiting bodies,mycelia,and fermentation broth,were introduced.The biological effects of N.aurantialba polysaccharides on the human body were summarized,and the current sta⁃tus of product development and utilization from N.aurantialba was expounded,with a view of providing theo⁃retical reference for in⁃depth research,development,and application of N.aurantialba polysaccharides in other fields.
