摘　　要：课程建设是高职院校建设的核心内容之一,依托“食品质量控制技术”在线开放课程,针对“食品质量控制技术”课程的教学,重点论述该课程在整体教学设计、教学策略、教学实施、教学评价4个方面的改革和探索,对“食品质量控制技术”课程的教学改革进行探讨,以期为其他高校食品质量类课程的教学改革和发展提供参考。The construction of courses is one of the key contents of the construction of vocational institutes.Based on the open online course Food Quality Control Technology,this paper focused on the reform and exploration of the course in four aspects:teaching overall design,teaching strategies,teaching implementation,and teaching evaluation,and explored the teaching reform of Food Quality Control Technology,aiming to provide a reference for teaching reform and development of food quality courses in other vocational institutes.
