野生和养殖可口革囊星虫肌肉营养成分分析

摘　　要：对浙江象山野生与养殖可口革囊星虫肌肉营养成分进行测定。结果表明,野生可口革囊星虫水分极显著高于养殖星虫(P<0.01),粗蛋白显著低于养殖星虫(P<0.05),粗脂肪和灰分无显著差异;野生和养殖星虫均测出17种氨基酸,氨基酸总量每100 g分别为(54.52±0.98)和(58.30±1.60)g,野生与养殖星虫中谷氨酸含量均为最高,每100 g分别为(9.22±0.12)和(10.19±0.28)g;野生和养殖星虫均测出15种脂肪酸,饱和脂肪酸含量分别为(1.22±0.08)和(1.52±0.07)mg/g,单不饱和脂肪酸含量分别为(0.51±0.05)和(0.78±0.03)mg/g,多不饱和脂肪酸含量分别为(1.59±0.07)和(2.17±0.06)mg/g。指出,养殖星虫营养价值比野生星虫高。The nutrient compositions of wild and cultured P.esculenta in Xiangshan,Zhejiang were analyzed.The results showed that the wild P.esculenta contained significantly more water than the cultured P.esculenta(P<0.01),the crude protein was significantly lower than the cultured P.esculenta(P<0.05),no significant difference in crude fat and ash;Wild and cultured P.esculenta detected 17 kinds of amino acids,the total amino acids were(54.52±0.98)and(58.30±1.60)g/100 g,respectively.The content of glutamate in wild and cultured P.esculenta,was the highest,(9.22±0.12)and(10.19±0.28)g/100 g respectively;15 fatty acids were measured in both wild and farmed P.esculenta,the contents of saturated fatty acids were(1.22±0.08)and(1.52±0.07)mg/g,the contents of monounsaturated fatty acids were(0.51±0.05)and(0.78±0.03)mg/g,and the contents of polyunsaturated fatty acids were(1.59±0.07)and(2.17±0.06)mg/g.Fed P.esculenta,have higher nutritional value than wild P.esculenta.The nutritional value of cultured P.esculenta is higher than that of wild P.esculenta.
