摘 要:为探究蓄冷剂对蓝莓果实物流过程中新鲜度的影响,以确保蓝莓在物流过程中保持较高的品质。以‘北陆’蓝莓为试材,设置mMAP(气调箱+气调元件)以及mMAP+蓄冷剂处理,对采后于0℃冷库中贮藏0 d和30 d后模拟物流3 d内蓝莓的感官品质、生理指标以及营养指标的变化进行分析。结果表明,蓄冷剂的加入使气调箱体中的温度24 h内始终低于室温,较未加蓄冷剂组多维持了3 h的低于室温环境;此外,蓄冷剂的加入有效抑制了蓝莓的霉变和软化,尤其在物流开始的前2 d效果更为显著;同时还有效抑制了蓝莓的生理代谢,在感官和营养指标上均优于未加入蓄冷剂的蓝莓;整体而言,蓄冷剂的加入能有效维持微环境气调箱内的低温环境,且加入蓄冷剂能有效抑制蓝莓的生理代谢,同时在感官和营养指标上均优于未加入蓄冷剂的蓝莓。综上可知,蓄冷剂的加入可以有效保持蓝莓在物流期间的果实新鲜度。This study aimed to investigate the effect of cold storage agents on fruit freshness during blueberry logistics to ensure that blueberries maintain high quality during the logistics process.In this study,‘Northland’blueberries were used as experimental test material,and two groups of treatments,mMAP and mMAP+cold storage agent,were set up to analyze the changes in sensory quality,physiological indexes,and nutrient indexes of blueberries in the simulated logistics for 3 d after 0 d and 30 d of post-harvest storage.The results of the study showed that the addition of the accumulator kept the temperature in the chamber below room temperature for 24 h,maintaining a cooler environment for more than 3 h more than without the accumulator.In addition,the addition of a cold storage a gent can effectively inhibit mold and softening of blueberries,especially during the first two days of logistics.At the same time,it can effectively inhibit the physiological metabolism of blueberries and is superior to blueberries without cold storage agents in both sensory and nutritional indexes.Overall,the addition of cold storage agents can effectively maintain the low-temperature environment in the micro-environmental controlled atmosphere chamber,and the addition of cold storage agents can effectively inhibit the physiological metabolism of blueberries,while the sensory and nutritional indicators are superior to those of blueberries without the addition of cold storage agent.A comprehensive analysis of the results indicated that the incorporation of a cold storage agent was effective in maintaining the fruit freshness of blueberries during logistics.
