摘 要:近年来,将益生菌加入生物聚合物(多糖、蛋白质和脂质)制备可食性涂膜并用于果蔬保鲜引起了越来越多的关注。含益生菌的可食性涂膜已成为一种创新的果蔬保鲜技术,其能保护果蔬免受微生物引发的腐败,在不改变其感官和营养特性的情况下提高食品的安全性、质量和功能性。并且益生菌作为肠道中的友好微生物具有良好的健康效益。综述了制作含益生菌可食性涂膜的主要材料、配方,益生菌活性的保持以及其对果蔬品质、安全等方面的影响,以期为该技术在果蔬保鲜中的进一步发展和应用提供参考。In recent years, the addition of probiotics to biopolymers (polysaccharides, proteins, and lipids) to prepare edible coatings for fruit and vegetable preservation has attracted increasing attention. Probiotic-loaded edible coatings have become an innovative fruit and vegetable preservation technology, that can protect fruits and vegetables from microbial spoilage, and improve food safety, quality, and functionality without altering their sensory and nutritional characteristics. Additionally, probiotics, as intestinal-friendly living microorganisms, offer significant health benefits. This article summarizes the main materials and formulations used for producing probiotic -loaded edible coatings, the maintenance of probiotic activity, and their impact on the quality and safety of fruits and vegetables, aiming to provide a reference for the further development and application of this technology in fruit and vegetable preservation.
