摘  要:本论文主要研究应用GC-IMS技术对酒花制品的挥发性组分进行检测分析,探讨了柱子型号和孵化温度对挥发性组分检出效果的影响,并运用该技术对酒花制品的品质一致性进行分析评价。结果表明GC-IMS技术适用于酒花制品中挥发性组分中烯类和类化合物的检测和可视化分析,为啤酒酿造行业酒花制品的品质一致性控制提供了新方法,为改善啤酒质量和推动品质升级提供了技术支持。The volatile compounds of hop products were detected and analyzed by using gas chromatography-ion mobility spectroscopy(GC-IMS)in this paper.We mainly investigated the effects of column type and incubation temperature on the aroma profiles,and we used this technology to evaluate the aroma consistency of hop products.The results showed that GC-IMS could detect and visually analyze the volatile compounds in different hop products,especially can detect and identify the trace-level terpenoids and terpenoids.GC-IMS provides a new method for the quality evaluation,monitor and control of hops or hop products as well as other raw materials in the beer brewing industry.And it provides technical support for promoting beer quality upgrading.
