摘 要:火龙果含有丰富的蛋白质、膳食纤维、维生素、微量元素、果胶和花青素,是一种天然保健水果。随着时代的进步,人们逐渐发现火龙果的利用价值,然而新鲜火龙果的保存期短,不适合长途运输,不利于火龙果的规模开发和保健价值推广。综述了火龙果在保健食品方面的开发和进展情况,主要包括果酒、保健茶饮、固体食品等方面的加工研究。Pitaya is an emerging fruit that is rich in protein,dietary fiber,vitamins,trace elements,pectin,and anthocya-nins.It is also a natural and healthy fruit.With the progress of the times,people have gradually discovered the utilization value of dragon fruit.However,the short shelf life of fresh dragon fruit is not suitable for long-distance transportation,which is not conducive to the large-scale development and promotion of dragon fruit's health value.This article reviewed the development and progress of dragon fruit in the field of health food,mainly including research on the processing of fruit wine,health tea drinks,and solid food.
