摘  要:朗姆酒是一种以甘蔗糖料为原料生产的蒸馏酒,其成分复杂,其中关键物质的测定对朗姆酒的质量控制和指导实际生产尤为重要。传统分析方法通常仅对某类物质的总量进行定量检测,其结果可能与真实值相差较大,且无法准确评价产品品质,对品质提升的指导作用有限。随着高级分析仪器和数据统计方法的普及,多种新的分析检测手段已被应用于朗姆酒领域。文章综述了用于检测朗姆酒风味物质和食品安全指标的新型分析方法,并简要介绍朗姆酒鉴别技术的最新进展,旨在为朗姆酒品质的提升提供参考。Rum is a distilled liquor produced from sugarcane or its products.Its composition is complex and the determination of key substances is particularly important for rum quality control and practical production guidance.Traditional analytical methods usually only quantify the total amount of a certain type of substance,and the results may differ significantly from the true values,making it difficult to accurately evaluate product quality and limiting their effectiveness in guiding quality improvement.With the popularization of advanced analytical instruments and statistical data methods,various new analytical techniques have been applied in the field of rum.This paper reviews novel analytical methods for detecting rum flavor substances and food safety indicators,and briefly introduces the latest advancements in rum authentication technologies,aiming to provide references for improving rum quality.
