摘 要:近年来我国食用淀粉产业发展迅速,各类淀粉总产量早已突破千万吨,显示出巨大的市场价值。市场上,不同种类淀粉价格相差很大,部分厂家为降低生产成本,出现以低价淀粉冒充高价淀粉的行为,这严重损害了消费者的合法权益。因此,近年来针对淀粉及其制品掺假鉴别技术的研究和开发具有广阔的应用前景。文章就当前淀粉及其制品鉴别方法的检测原理、优缺点、应用进行了综述,并对现有方法的局限性和未来发展方向进行讨论,以期为淀粉及其制品鉴别检测技术的开发和利用提供参考。In recent years,the edible starch industry has developed rapidly in China,with the total production of various starches exceeding ten million tons,demonstrating significant market value.In the market,there is a considerable price difference among different types of starch.To reduce production costs,some manufacturers have engaged in practices of passing off low-priced starch as high-priced starch,which seriously undermines the legitimate rights and interests of consumers.Therefore,the research and development of adulteration identification technologies for starch and its products have broad application prospects.This article reviews the detection principles,advantages and disadvantages,and applications of current methods for identifying starch and its products,and discusses the limitations of existing methods and future development directions,aiming to provide a reference for the development and utilization of identification technologies for starch and its products.
