摘 要:土窖池是凤型大曲酒生产的重要设备,是提升基酒品质的关键因素之一。通过对凤香型酒生产的地理环境,土壤结构质量成分,土壤和酿酒微生物的生长、繁殖,代谢产物与酒醅发酵机理的分析。结合凤型酒的生产方式、质量特点,从而确定对凤型酒传统与现行建窖方式进行改进,建立凤型酒生态建窖方案,以达到提高凤型酒质量之目的。The soil cellar is important equipment for the production of Feng flavor Daqu liquor,and is also one of the key factors to improve the quality of the base liquor.By analyzing the geographical environment,soil structure and quality components,growth and reproduction of soil and liquor making microorganisms,metabolic products,and fermentation mechanismof fermented grains of Feng flavor liquor production,as well as the production method and quality characteristics of Feng flavor liquor,it was determined to make the improvement of the traditional and current cellar building methods of Feng flavor liquor.An ecological cellar building plan for Feng-flavor liquor was established to improve the quality of Feng-flavor liquor.
