备战奥运国家队运动员餐厅食品安全保障体系的研究与应用

摘　　要：本文通过对驻训基地运动员餐厅实地调研,并结合文献资料和专家访谈,对国家队训练基地运动员餐厅食品安全保障体系进行了系统的研究,从运动员餐厅食品安全风险监控管理的应用,运动员餐厅食源性兴奋剂的防控措施,食品安全快检技术的应用,运动员及餐厅相关人员持续的营养素养培养与食品安全教育等方面进行了探讨和研究,对食品安全监管工作提出了合理的建议和措施。在提供高品质的营养和食品安全保障的同时,有效降低了运动员基地餐厅的食品安全风险。Through the field survey of athletes'canteen in the residency of athletes'training base,together with literature reviews and interviews of relevant experts,this study conducts a systematic research on the food safety assurance system of the athletes'canteen in the National Team training bases,including the new procedures of food safety risk monitoring and management applied in the athletes'canteen,the special control and prevention enforcement of food-borne substances regarding anti-doping regulations in the athletes'canteen,the application of rapid processing technology in food safety inspection,the discussion and research in the aspect of continuous nutrition competencies training and food safety education not only for athletes,as well as the canteen staff,and provided appropriate suggestions and measures for food safety supervision.In the meanwhile of providing high-quality nutrition and food safety assurance, the food safety assurance system in this study can reduce the food safety risk of the athletes' canteen effectively.
