摘 要:食品安全直接关系到公众的生命健康以及社会的稳定。在食品供应链日趋复杂的背景下,食品安全风险呈现出多元化和隐蔽性特征,使得食品安全监管工作变得越来越重要。食品抽样工作是食品安全监管的基础,科学、合理地开展食品抽样可以及时发现食品安全隐患,为后续风险评价、问题处置和相关法律法规的完善提供强有力的支持。在此背景下,本文概述了食品抽样的基本原则与方法,探究了食品抽样的优势与挑战,分析了食品抽样在食品监督中的应用,并提出了加强食品抽样工作的建议,旨在为食品监督领域的从业人员提供参考。Food safety is directly related to the life and health of the public and the stability of society.In the context of increasingly complex food supply chains,food safety risks are diversified and hidden,making food safety supervision more and more important.Food sampling is the basis of food safety supervision.Scientific and reasonable food sampling can timely discover food safety hazards and provide strong support for subsequent risk assessment,problem handling and the improvement of relevant laws and regulations.In this context,this article outlines the basic principles and methods of food sampling,explores the advantages and challenges of food sampling,analyzes the application of food sampling in food supervision,and puts forward suggestions for strengthening food sampling,aiming to provide reference for practitioners in the field of food supervision.
