摘  要:能量代谢与果蔬耐贮性和生理代谢活动相关。草菇味道鲜美,富含营养,是我国土特产出口的主要种类之一,但其采后不易保鲜,是限制其远距离运输和贮藏的主要因素。本研究以新鲜草菇为材料,经三磷酸腺苷(adenosine triphosphate,ATP)和羰基氰化物间氯苯腙(carbonyl cyanide 3-chlorophenylhydrazone,CCCP)溶液浸泡处理4min后,测定草菇感官品质及糖代谢相关酶等指标。最终发现ATP处理能降低草菇的失重率、褐变度、黏附性,保持其较好的硬度、可溶性固形物、总蛋白、抗坏血酸含量,CCCP处理则与之相反。与CK组相比,ATP和CCCP处理都会降低草菇葡萄糖、果糖含量和磷酸果糖激酶活性,ATP处理会提高丙酮酸激酶、己糖激酶、6-磷酸葡萄糖脱氢酶和辅酶ⅡNADP(H)活性,维持较高总糖和蔗糖含量,从而维持较好的贮藏品质,CCCP处理则与之相反。Energy metabolism is related to the storability and physiological metabolic activities of fruits and vegetables.Delicious Volvariella volvacea is rich in nutrients,and is one of the main export specialty products of China.However,it is not easy to preserve and keep fresh after harvest,resulting in limitation of long-distance transportation and long-term storage.In this experiment fresh V.volvacea fruiting bodies were immersed in adenosine triphosphate(ATP)and carbonyl cyanide 3-chlorophenylhydrazone(CCCP)solution for 4 minutes,and then the sensory quality of V.volvacea and indicators of sugar metabolism-related enzymes were determined.It was found that ATP treatment could reduce the weight loss rate and browning degree,decrease adhesiveness,and maintain good hardness,soluble solids,total protein,and ascorbic acid content of V.volvacea,while CCCP treatment showed the opposite effects.Compared with the CK group,both ATP and CCCP treatment reduced the glucose and fructose content and phosphofructokinase activity of V.volvacea.ATP treatment increased pyruvate kinase,hexokinase,glucose-6-phosphate dehydrogenase and coenzymeⅡNADP(H)activity,maintaining higher total sugar and sucrose content,and thereby maintaining better storage quality,while CCCP treatment is opposite.
