摘 要:樱桃番茄水分含量高且鲜嫩皮薄,贮藏难度较大。为探究低压静电场(Low voltage electrostatic field,LVEF)对樱桃番茄保鲜效果的影响,分析了200 mV低压静电场(LVEF200)和300 mV低压静电场(LVEF300)处理对4℃条件下贮藏的樱桃番茄果实品质和细胞壁代谢的影响。结果表明,与对照组相比,贮藏过程中LVEF处理可延缓采后樱桃番茄硬度、失重率、可溶性固形物和可滴定酸含量的下降,抑制细胞壁降解酶,如纤维素酶(Cx)、β-半乳糖苷酶(β-Gal)、多聚半乳糖醛酸酶(PG)和果胶酯酶(PME)的活性,延缓原果胶的分解和可溶性果胶含量的增加。其中对于贮藏期间樱桃番茄果实的硬度、呼吸强度、可溶性固形物含量、可滴定酸含量、Cx活性、β-Gal活性、原果胶含量和可溶性果胶含量的变化而言,LVEF300处理的保鲜效果优于LVEF200处理,而对于贮藏期间失重率、PG活性和PME活性变化而言,LVEF200处理保鲜效果略优于LVEF300处理。综上,LVEF处理可通过抑制细胞壁代谢途径相关降解酶的活性延长樱桃番茄的贮藏期。Cherry tomatoes are difficult to storage because of their high moisture contents and thin skins.In order to investigate the effects of low voltage electrostatic fields(LVEF)on the preservation of cherry tomatoes,the effects of 200 mV low-voltage electrostatic field(LVEF200)and 300 mV low-voltage electrostatic field(LVEF300)on fruit qualities and cell wall metabolisms of cherry tomatoes stored at 4℃ were analyzed.The results showed that LVEF treatments delayed the decrease of firmness,weight loss rates,total soluble solids and titratable acid contents of cherry tomatoes compared with control group,and inhibited the activities of cell wall degrading enzymes such as cellulase(Cx),β-galactosidase(β-Gal),polygalacturonase(PG),and pectin esterase(PME),and delayed the decomposition of protopectin and the increase of soluble pectin contents during storage.Moreover,the LVEF300 treatment group presented better preservation effects in hardness,respiratory intensity,soluble solid and titrable acid contents,Cx and β-Gal activities,protopectin and soluble pectin contents of cherry tomatoes during storage than that in LVEF200 treatment group,while LVEF200 treatment group demonstrated superior preservation effects in weight loss rates,PG and PME activities than that in LVEF300 treatment group.These results suggested that LVEF treat ments could prolong the storage period of cherry tomatoes by inhibiting the activities of degradative enzymes related to cell wall metabolic pathways.
