摘 要:该试验选取43头8月龄、 48头12月龄和30头16月龄民猪,对其胴体性状和肉品质进行测定。结果表明:胴体方面,16月龄胴体重极显著高于12月龄和8月龄(P<0.01)。8月龄直长、背膘厚极显著低于12月龄和16月龄(P<0.01), 8月龄斜长显著低于12月龄和16月龄(P<0.05)。肉品质方面,8月龄组pH45min值极显著高于16月龄(P<0.01)。肉色值随着月龄的增加表现出升高趋势,但仅在8月龄组红度和黄度显著低于16月龄(P<0.05)。在剪切力方面,8月龄和16月龄组背最长肌的剪切力极显著高于12月龄组(P<0.05)。营养成分方面,8月龄组脯氨酸和赖氨酸显著高于16月龄组(P<0.05),鲜味氨基酸和必需氨基酸不同月龄组间无显著差异(P>0.05)。8月龄组肌内脂肪含量极显著低于12月龄和16月龄组(P<0.01),但12月龄和16月龄组间差异不显著(P>0.05)。可见,8月龄民猪个体在胴体和肉品质方面与12月龄和16月龄个体间存在较大差异,而12月龄和16月龄个体间差异不大。43 8-month-old, 48 12-month-old, and 30 16-month-old Min pigs were selected for the measurement of their carcass andmeat quality. The results showed that in terms of carcass, the carcass weight at 16 months was significantly greater than those at12 months and 8 months (P<0.01). The straight length and backfat thickness at 8 months were significantly lower than those at12 and 16 months (P<0.01), and the diagonal length at 8 months was significantly lower than those at 12 months and 16 months(P<0.05). In terms of meat quality, the pH45 min at 8 months was significantly greater than those at 16 months (P<0.01). The meatcolor value showed an increasing trend with age, but only in the 8-month-old group, the redness and yellowness were significantlylower than those in the 16-month-old group (P<0.05). In terms of shear force, the shear force of the longest dorsal muscle at 8 months and 16 months were significantly higher than that at 12 months (P<0.05). In terms of nutritional composition, the8-month-old group showed significantly higher levels of proline and lysine compared to the 16-month-old group (P<0.05), whilethere were no significant differences in umami amino acids, and essential amino acids between different age groups (P>0.05). Theintramuscular fat content in the 8-month-old group was significantly lower than that in the 12-month and 16-month-old groups(P<0.01), but the difference between the 12-month and 16-month old groups was not significant (P>0.05). There are significantdifferences in carcass and meat quality between 8 months Min pigs and 12 or 16 months, while there is not much differencebetween 12 and 16 months.
