摘 要:试验旨在通过体外酶解预消化处理,研究木聚糖酶、纤维素酶、植酸酶在米糠粕非淀粉多糖降解过程中的作用效果。试验以去除淀粉的米糠粕为原料,采用单因素试验和响应面试验优化木聚糖酶、纤维素酶、植酸酶降解米糠粕中非淀粉多糖的工艺条件。结果显示,体外降解米糠粕中非淀粉多糖的最适条件为酶解pH值3.7、酶解温度50℃、木聚糖酶添加量2.0%、纤维素酶添加量1.0%、植酸酶添加量1.8%、酶解时间3.5 h。酶解预消化处理后,米糠粕中还原糖含量提高了7531%,肌醇含量提高了1620%,中性洗涤纤维、酸性洗涤纤维、酸性洗涤木质素、粗纤维的降解率分别为47.4%、24.0%、12.1%、21.3%,植酸降解率为99.9%。研究表明,体外酶解预消化技术有效降低了米糠粕中抗营养因子的含量,提高了米糠粕的营养价值。The experiment aims to study the effects of xylanase,cellulase,and phytase on the degradation of non-starch polysaccharides in rice bran through in vitro enzymatic pre-digestion treatment.Experiment with defatted rice bran as the raw material,using single-factor experiments and response surface methodology to optimize the process conditions for the degradation of non-starch polysaccharides in rice bran by xylanase,cellulase,and phytase.The results showed that the optimum conditions for degradation of non-starch polysaccharides in rice bran meal in vitro were:pH value 3.7,temperature 50℃,xylanase content 2.0%,cellulase content 1.0%,phytase content 1.8%and enzymatic hydrolysis time 3.5 h.After enzymatic hydrolysis pretreatment,the reducing sugar in rice bran meal was increased by 7531%,inositol was increased by 1620%,the degradation rates of neutral detergent fiber,acid detergent fiber,acid detergent lignin and crude fiber were 47.4%,24.0%,12.1%and 21.3%,respectively,the degradation rates of phytic acid was 99.9%.The study indicates that enzymatic hydrolysis predigestion technology in vitro effectively reduced the content of anti-nutrition factors in rice bran meal and improved the nutritional value of rice bran meal.
