摘  要:母乳低聚糖(human milk oligosaccharides,HMOs)既可以作为益生元,促进双歧杆菌等有益肠道微生物的定植生长;也可以作为诱饵受体,抑制致病微生物附着在结肠黏膜上;还可以作为免疫调节剂和结肠成熟刺激剂。其中唾液酸乳糖因其在促进婴幼儿发育、抗病毒以及改善肠道健康等方面的作用,根据2023年最新美国和欧盟的法规规定,已被允许作为营养强化剂应用于婴幼儿配方食品和保健品中。唾液酸乳糖最常见的两种为3'-唾液酸乳糖(3'-Sialyllactose,3'-SL)和6'-唾液酸乳糖(6'-Sialyllactose,6'-SL),通常是HMOs所含唾液酸化寡糖中含量最高的两种,在食品及制药行业的商业价值及应用潜力巨大,本文主要简述两种唾液酸乳糖的生理功能及生物合成进程。Human milk oligosaccharides(HMOs)can serve as prebiotics,promoting the colonization and growth of beneficial intestinal microorganisms such as bifidobacterium.They can also act as decoy receptors,inhibiting the adhesion of pathogenic microorganisms to the colon mucosa;they can also be used as immunomodulators and colon maturation stimulators.Among them,sialyllactose has garnered attention for its roles in promoting infant development,antiviral and improving intestinal health,according to the latest regulations of the United States and the European Union in 2023,it has been allowed to be used as a nutritional fortifier in infant formula and health products.The two most common types of sialyllactose are 3'-Sialyllactose(3'-Sialyllactose,3'-SL)and 6'-sialyllactose(6'-SL),which are usually the two most abundant of the sialyllactose oligosaccharides found in HMOs.They have great commercial value and application potential in the food and pharmaceutical industries.The physiological function and biosynthesis process of two kinds of sialyllactose are reviewed in this paper.
