保健食品中4种有害重金属的检测与分析

摘  要:目的:检测辅助降血脂类、增强免疫力类、辅助降血压类、营养补充剂类等四大类保健食品中铅、汞、砷、镉的含量,评价重金属残留情况,为保健食品的质量安全评价提供参考。方法:采用原子吸收光谱仪测定镉、铅含量,采用原子荧光光谱仪测定汞与砷的含量,并进行方法学考察。结果:4种元素在相应浓度范围内线性关系良好,相关系数均大于0.995;加标回收率在93.2%~98.2%;4种保健食品中镉的含量为0~0.13 mg·kg^(-1),铅含量为0~0.55 mg·kg^(-1),汞含量为0~0.25 mg·kg^(-1),砷含量为0~0.30 mg·kg^(-1)。结论:80批保健食品质量总体良好,其中增强免疫力类及辅助降血压类保健食品中汞与铅含量相对较高。Objective:To detect the contents of lead,mercury,arsenic and cadmium in four categories of health foods,including hypolipidemic products,immunity enhancement products,blood pressure lowering products and nutritional supplements,and to evaluate the residues of heavy metals,so as to provide reference for the quality and safety evaluation of health foods.Method:Atomic absorption spectroscopy was used to determine the contents of cadmium and lead,and atomic fluorescence spectroscopy was used to determine the contents of mercury and arsenic,and the methodological investigation was carried out.Result:The linear relationship between the four elements was good in the corresponding concentration range,the correlation coefficient was greater than 0.995,and the recovery rate was 93.2%to 98.2%.The contents of cadmium,lead,mercury and arsenic in the four health foods were 0 mg·kg^(-1)to 0.13 mg·kg^(-1),0 mg·kg^(-1)to 0.55 mg·kg^(-1),0 mg·kg^(-1)to 0.25 mg·kg^(-1)and 0 mg·kg^(-1)to 0.30 mg·kg^(-1).Conclusion:The quality of the 80 batches of health food was generally good,and the contents of mercury and lead in the immunityenhancing and antihypertensive health foods were relatively high.
