摘 要:甘油三酯(Triacylglycerol,TAG)作为食用油的主要成分,是体内储量最大和产能最多的能源物质,因其消化代谢后容易转化为储能脂肪,过多易诱发心脑血管病。甘油二酯(Diacylglycerol,DAG)是以普通植物油为原料,以脂肪酶制剂、水、甘油等为主要辅料,在脂肪酶的催化作用下,将TAG的一个脂肪酸取代为一个羟基,从而形成的结构脂质。大量研究发现,日常膳食摄入一定量的DAG具有减少内脏脂肪堆积、抑制体重增加、降低高血脂的作用。此综述介绍了DAG的代谢途径、安全性以及DAG的减肥降脂机制和功能,为DAG作为医学营养和健康产品提供了理论基础。Triacylglycerol(TAG),as the main component of edible oil,is the energy substance with the largest storage and largest capacity in the body.Because TAG is easily converted into storage fat after digestion and metabolism,excessive TAG is easy to induce cardiovascular and cerebrovascular diseases.Diacylglycerol(DAG)is a structural lipid formed by replacing a fatty acid of TAG with a hydroxyl group under the catalysis of lipase by using ordinary vegetable oil as raw material and lipase preparation,water and glycerol as the main auxiliary materials.A large number of studies have found that daily dietary intake of DAG can reduce visceral fat accumulation,inhibit weight gain,and reduce hyperlipidemia.This review introduces the metabolic pathways and safety of DAG,as well as the mechanism and function of DAG in weight loss and lipid lowering,which provides a theoretical basis for DAG as medical nutrition and health products.
