摘　　要：天麻是一种药食同源植物,在我国拥有悠久的种植与食用历史,其独特的康养保健功效使其成为功能性食品研究领域的焦点。新鲜天麻在贮藏过程中面临着酶促褐变和微生物污染等挑战,使其保鲜和加工技术成为研究的重中之重。概述了天麻的生物学特性,综述了鲜天麻的贮藏保鲜方式,分析了天麻加工工艺以及深加工对其品质的影响,并提出相关思考和建议,旨在推动传统中药材向现代农业商品化转型升级,同时促进天麻在保鲜和加工技术方面的创新,促进天麻产业发展。Gastrodia elata Blume,a medicinal and food homologous planted in China,has a long history of traditions of cultivation and eating.Its unique healthcare and nutritional benefits made it the focus of functional food research.Fresh Gastrodia elata Blume faced challenges such as enzymatic browning and microbial contamination during the storage process,making preservation and processing technology the top priority of research.This paper summarized the biological characteristics of Gastrodia elata Blume,reviewed the storage and preservation methods of fresh Gastrodia elata Blume,and analyzed the processing technologies and the impact of deep processing on its quality.Furthermore,the paper offered relevant thoughts and suggestions aimed at promoting the transformation and upgrading of traditional Chinese herbal medicinal to modern agricultural commodities.This also aimed to foster innovation in preservation and processing technologies,thereby enhancing the development of the Gastrodia industry.
