摘 要:为探究没食子酸影响青贮发酵和蛋白质保存的机制,试验研究了没食子酸及其降解产物焦性没食子酸、间苯二酚、间苯三酚、丙酮酸对构树叶青贮发酵品质和营养成分含量的影响。以新鲜构树叶为原料,开展实验室袋装青贮试验,添加剂按鲜重基础的1%添加,青贮发酵60 d后取样分析。结果显示,与对照组相比,间苯二酚组构树叶青贮乳酸菌数量显著减少(P<0.05)。与对照组相比,各组pH无显著差异(P>0.05);间苯二酚组和间苯三酚组的乳酸浓度显著高于其他组(P<0.05),而乙酸浓度显著低于其他组(P<0.05),且未检出甲酸;对照组和没食子酸组的甲酸浓度显著高于其他处理组(P<0.05);仅丙酮酸组检出丙酸、丁酸,且其乙酸浓度显著高于焦性没食子酸组(P<0.05),未检出乳酸、甲酸。与对照组相比,除了丙酮酸组其余试验组均显著降低了构树叶青贮氨态氮浓度(P<0.05)。与对照组相比,除了没食子酸组其余试验组均显著提高青贮干物质和真蛋白含量(P<0.05)。综合来看,添加没食子酸、焦性没食子酸、间苯二酚、间苯三酚可以减少构树叶青贮蛋白质水解,改善构树叶青贮营养保存效果,说明没食子酸及其部分降解产物对青贮蛋白质保存有改善作用。In order to explore the mechanism of gallic acid affecting silage fermentation and protein preservation,this study was to investigate the effects of gallic acid and its degradation products including pyrogallic acid,resorcinol,phloroglucinol and pyruvic acid on the fermentation quality and nutrient content of Broussonetia papyrifera leaf silage.Fresh Broussonetia papyrifera leaves were used as raw materials to prepare laboratory-level bag silage.Additives were added at 1%on a fresh weight basis,and samples were collected by 60 days of silage fermentation.The results showed that compared with control group,the number of lactic acid bacteria in resorcinol group leaf silage was significantly reduced(P<0.05).Compared with control group,there was no significant difference in pH among the groups(P>0.05);the lactic acid concentration in the resorcinol and phloroglucinol groups was significantly higher than in the other groups(P<0.05),while the acetic acid concentration was significantly lower than in other groups(P<0.05),and formic acid was not detected;the formic acid concentration in the cinnamic acid and gallic acid groups was significantly higher than in other treatment groups(P<0.05);only the pyruvic acid group detected propionic acid and butyric acid,and its acetic acid concentration was significantly higher than in the tannic acid group(P<0.05),with no detection of lactic acid or formic acid;compared to the control group,all experimental groups except the pyruvic acid group significantly reduced the ammonia nitrogen concentration in the tree-like green silage(P<0.05).Compared with control group,all other experimental groups except the tannic acid group significantly increased the green silage dry matter and true protein content(P<0.05).In summary,the addition of gallic acid,pyrogallic acid,resorcinol and phloroglucinol can reduce protein hydrolysis during ensiling fermentation and improve the nutritional preservation of Broussonetia papyrifera leaf silage,indicating that gallic acid and some of its degradation pr
