摘　　要：探究不同贮存楼层对龙江911片烟醇化进程和醇化质量的影响,将龙江911片烟贮存于河南新郑自然醇化库的不同楼层,即5号库1层(5-1)、5号库3层(5-3),研究醇化过程中片烟的化学成分和感官质量的变化。结果表明,随着醇化的进行,不同楼层醇化片烟的pH及总糖、还原糖、总氮、总植物碱、质体色素和多酚类物质含量均呈波动降低趋势,碘值吸光度值呈增加趋势。醇化过程中,5-3处理片烟的pH及总糖、还原糖和质体色素含量降幅均高于5-1处理,5-3处理片烟的碘值吸光度值增幅高于5-1处理。不同楼层醇化库片烟的感官质量得分先上升后下降,5-1和5-3处理的片烟感官质量分别在醇化27、24个月时达到最佳,且5-1处理的保质效果优于5-3处理。The aim of this study was to explore the influence of different storage floors on the aging process and quality of flue-cured tobacco of Longjiang 911.The tobacco strips of tobacco cultivar Longjiang 911 were stored at different floors in Xinzheng warehouse of Henan Province:the first floor of warehouse No.5(5-1),the third floor of warehouse No.5(5-3).The dynamic changes of chemical contents and sensory quality of tobacco strips were studied.The results showed that the pH value,total sugar,reduced sugar,total nitrogen,total plant alkaloid,plastid pigment and polyphenol decreased,while the iodine absorbency value increased with the increasing of aging time.In the process of natural aging,the decrease of pH value,total sugar,reduced sugar and plastid pigment contents of tobacco strips under 5-3 treatment were higher than that of 5-1 treatment,and the increase of iodine absorbency values of 5-3 tobacco were higher than that of 5-1 treatment.The sensory quality score showed the trend of rising first and falling later.The sensory quality of tobacco strips aged under 5-1 and 5-3 warehouses reached the best at the 27 and 24th months,respectively.The quality-preserving effect of the 5-1 treatment was better than the 5-3 treatment.
