摘 要:为了解潮汕粿品中赭曲霉毒素A(Ochratoxin A,OTA)的污染情况,选取99份潮汕粿品及其原料,通过酶联免疫吸附法(Enzyme Linked Immunosorbent Assay,ELISA)试剂盒进行初筛,利用免疫亲和层析净化-高效液相色谱法(Immunoaffinity Chromatography Purification-High Performance Liquid Chromatography,ICPHPLC)测定潮汕粿品中OTA含量。结果表明,ELISA试剂盒检出OTA样品32个,检出率为32.32%,将ELISA试剂盒初筛阳性样品经HPLC测定OTA含量,1个红桃粿、2个鼠壳粿样品中OTA检出浓度分别为0.58μg·kg^(-1)、0.17μg·kg^(-1)和0.48μg·kg^(-1),因此需加强对潮汕粿品中OTA污染状况的关注。To understand the contamination of ochratoxin A(OTA)in Chaoshan rice cakes,99 samples of Chaoshan rice cakes and their raw materials were selected.Enzyme linked immunosorbent assay(ELISA)test kit was used for initial screening,and the OTA content in Chaoshan rice cakes was determined using immunoaffinity chromatography purification high performance liquid chromatography(ICP-HPLC).The results showed that 32 OTA samples were detected by ELISA test kit,with a detection rate of 32.32%.The OTA content was determined by HPLC on the positive samples screened by ELISA test kit.The OTA detection concentrations in one red peach cake and two mouse shell cake samples were 0.58μg·kg^(-1),0.17μg·kg^(-1),and 0.48μg·kg^(-1),respectively.Therefore,it is necessary to strengthen the attention to the OTA pollution status in Chaoshan cake products.
