摘  要:我国地域辽阔,孕育了丰富的传统烹饪原料。这些富有地方特色的食材,不仅是中华美食的物质基础,更凝结着深厚的地域文化底蕴。烹饪原料的地域特色彰显了中华烹饪的多元一体,蕴含着中华民族的生存智慧,是弥足珍贵的物质文化遗产。新时代,传承保护传统烹饪原料的地域特色,要从原料源头抓起,通过挖掘整理特色原料种质资源、扶持原产地种植养殖业、创新原料精深加工工艺、宣传特色食材文化等途径,推动特色原料产业振兴,为中华烹饪文化创新性传承注入动力。China has a vast territory and has nurtured rich traditional cooking ingredients.These locally unique ingredients are not only the material foundation of Chinese cuisine,but also embody profound regional cultural heritage.The regional characteristics of cooking ingredients showcase the diversity and unity of Chinese cuisine,embodying the survival wisdom of the Chinese nation and being a precious material cultural heritage.In the new era,to inherit and protect the regional characteristics of traditional cooking ingredients,we must start from the source of the ingredients.Through exploring and organizing the germplasm resources of characteristic ingredients,supporting the planting and breeding industry in the original place,innovating the deep processing technology of ingredients,and promoting the culture of characteristic ingredients,we can promote the revitalization of the characteristic ingredient industry and inject momentum into the innovative inheritance of Chinese culinary culture.
