摘  要:食用昆虫种类繁多、繁衍速度快、营养价值高,是符合人类蛋白需求的优质蛋白源,可以满足人类所有的营养需求,具有重要的应用价值。但食用昆虫分布广泛,生活环境复杂,可能蕴含毒素和过敏原,存在一定的食用风险。本文就食用昆虫种类、营养成分、保健价值、存在的风险及代表性昆虫蚕的食用价值进行概述,以期为食用昆虫的开发与利用提供参考。Edible insects have a wide variety of species,reproduce quickly,and have high nutritional value,making them a valuable source of protein that meets human nutritional needs.They can meet all of human’s nutritional requirements and have significant value.However,edible insects are widely distributed and have complex living environments,which may contain toxins and allergens,posing certain risks of consumption.This article provides an overview of the types of edible insects,their nutritional components,health benefits,existing risks,and the edible value of representa-tive insects such as silkworms,in order to provide reference for the development and utilization of edible insects.
