摘  要:为揭示水力空化对淀粉相对分子量及黏度的影响,以玉米淀粉糊为研究对象,采用凝胶渗透色谱法(gel permeation chromatography,GPC)检测相对分子量、乌氏黏度计检测特性黏度,考察不同水力空化条件及淀粉糊质量浓度对玉米淀粉糊相对分子量及其分布和黏度的影响。结果表明:在水力空化作用下,玉米淀粉糊的相对分子量、特性黏度均有一定程度的降低;在相同条件下,随着玉米淀粉糊的质量浓度的减小和空化作用时间的延长,空化后淀粉糊的特性黏度和相对分子量均有所减小,当pH=6.0时相对分子量降至最低值,可见水力空化对玉米淀粉糊有较好的降解作用。To reveal the effect of hydraulic cavitation on the viscosity and relative molecular weight of starch,the relative molecular weight was detected by gel permeation chromatography(GPC),and the viscosity of corn starch paste was measured by Ozl viscosity,and the effects of different hydraulic cavitation conditions and starch paste concentration on the relative molecular weight and distribution and the viscosity of corn starch paste were investigated.Under the action of hydraulic cavitation,the relative molecular weight and intrinsic viscosity of corn starch paste decreased to a certain extent.Under the same conditions,with the decrease of starch paste concentration and the extension of action time,the intrinsic viscosity and relative molecular weight of starch paste after cavitation reduced,and the relative molecular weight decreased to the lowest value when the pH was 6.0,indicating that hydraulic cavitation has a great effect on the viscosity and relative molecular weight of corn starch paste,and that hydraulic cavitation has a good degradation effect on starch paste.
