摘  要:食品掺假问题不仅会对消费者健康造成威胁,还会对整个食品行业产生负面影响,并引发信任危机。高光谱成像技术因具有无创、快速、准确和高通量的特点,已成为鉴别食品掺假现象的一种重要技术。本文综述高光谱成像技术在畜禽肉制品、水产品、粮食、乳制品、蜂蜜、食用油等食品掺假检测中的应用研究进展,以期为优化食品掺假的检测方法提供理论依据。Food adulteration not only poses a threat to consumers’health,but also has a negative impact on the whole food industry and triggers a crisis of confidence.Hyperspectral imaging technology has become an important technique for the identification of food adulteration because of its non-invasive,rapid accurate,and high-throughput characteristics.This paper reviews the research progress on the application of hyperspectral imaging technology in adulteration detection of livestock and poultry meat products,aquatic products,grain,dairy products,honey,and edible oils,so as to provide theoretical basis for optimizing the detection methods of food adulteration.
