摘 要:试验旨在研究不同群体斑鳠(Mystus guttatus)的营养成分及品质差异。选择广西来宾市兴宾区(XB)、南宁市武鸣区(WM)、百色市平果市(PG)3个不同地区斑鳠27尾,采用常规方法对群体斑鳠肌肉中的粗蛋白、氨基酸和脂肪酸等组成与含量进行测定和评价。结果显示,3个群体斑鳠的粗蛋白含量为19.16%~19.82%,群体PG的粗蛋白含量稍高于其他群体(P>0.05)。3个群体斑鳠的氨基酸总量为17.39~18.56 g/100 g,其氨基酸评分(AAS)、化学评分(CS)和必需氨基酸指数(EAAI)无显著性差异(P>0.05),均表现为群体XB>群体PG>群体WM。3个群体斑鳠的多不饱和脂肪酸含量为21.25%~22.57%,二十碳五烯酸(EPA)+二十二碳六烯酸(DHA)含量为1.72%~2.42%(P>0.05),其中多不饱和脂肪酸含量表现为群体XB>群体PG>群体WM,EPA+DHA含量表现为群体WM>群体PG>群体XB。研究表明,斑鳠肌肉蛋白质含量较高,氨基酸组成和含量丰富,包含多种不饱和脂肪酸含量和矿物质元素,其中群体PG斑鳠肌肉的风味和营养价值相比于其他群体表现得更为全面。The experiment aimed to investigate the nutritional components and quality differences among different groups of Mystusguttatus.Selected 27 individuals of Mystusguttatusfrom three different regions:Xingbin District of Laibin City(XB),Wuming District of Nanning City(WM),and Pingguo City of Baise City(PG)in Guangxi,conventional methods were employed to determine and evaluate the composition and content of crude protein,amino acids,and fatty acids in the muscle of the groups of Mystusguttatus.The results showed that the crude protein content of the three groups of Mystus guttatusranged from 19.16%to 19.82%,with the PG group having a slightly higher crude protein content than the others(P>0.05).The total amino acid content for the three groups of Mystusguttatusranged from 17.39 to 18.56 g/100 g.There were no significant differences in their amino acid score(AAS),chemical score(CS),and essential amino acid index(EAAI)(P>0.05),with the order of performance being XB>PG>WM.The content of polyunsaturated fatty acids in the three groups of Mystusguttatusranged from^(2)1.25%to 22.57%,and the combined content of eicosapentaenoic acid(EPA)and docosahexaenoic acid(DHA)ranged from 1.72%to 2.42%.There were no significant differences among the three groups in these measures(P>0.05).The PUFA content was higher in the order of XB>PG>WM,while the EPA+DHA content was higher in the order of WM>PG>XB.The study indicates that the muscle of Mystusguttatushas a high protein content,a rich composition and abundance of amino acids,and contains a variety of polyunsaturated fatty acids and mineral elements.Among them,the muscle of the PG group shows a more comprehensive flavor and nutritional value compared to the other groups.
