摘 要:试验旨在探究林麝传统饲料(如干树叶、胡萝卜、精饲料)和全价颗粒饲料的风味特征,为林麝颗粒饲料香型的改良做出参考。选取林麝养殖户提供的干树叶、精饲料、胡萝卜,某公司生产的3种林麝专用颗粒饲料,使用电子鼻技术检测10种饲料在气味上的差异,再通过GC-MS技术对10种饲料的挥发性成分进行定性和定量分析,确定各种饲料的主要香型。结果表明:电子鼻可以将林麝传统饲料与颗粒饲料在气味上区分开来,特别是S2、S4、S7、S9、S10这5个传感器,在区分各种饲料中起到了显著作用。GC-MS结果显示,林麝传统饲料呈现草木香、奶香以及花果香等,林麝颗粒饲料有草香、甜香还有樟脑、药草香、酒香等复杂的香型。The experiment was designed to investigate the flavor characteristics of traditional feeds(e.g.,dried leaves,carrots,and concentrate feeds)and full-price pellet feeds for musk forests,and to make reference for the improvement of the aroma of pellet feeds for musk forests.Dried leaves,concentrate feed and carrots provided by forest musk farmers,and three kinds of pellet feeds for forest musk produced by a company were selected,and the differences in odors among the 10 feeds were detected using the electronic nose technique,and then the volatile constituents of the 10 feeds were qualitatively and quantitatively analyzed by the GC-MS technique,so as to determine the main aromas of the various feeds.The results showed that the electronic nose could distinguish the traditional feed of forest musk from the pellet feed in terms of odor,especially the five sensors,S2,S4,S7,S9 and S10,which played a significant role in distinguishing the various feeds.The GC-MS results showed that the traditional feeds of musk presented grassy,woody,milky,and floral and fruity aromas,while the pellet feeds of musk had grassy and sweet aromas,as well as complex aromas such as camphor,medicinal herbs and wine aromas.
