摘 要:“食品化学”课程在食品科学与工程领域扮演着至关重要的角色,但传统的教学方法可能面临学生兴趣不高、课程内容脱离实际需求等挑战。探讨了如何基于OBE(outcome-based education)模式改进大学“食品化学”课程的教学方法。通过OBE的理念,能够更好地关注学生的学习成果,使课程更加贴近现实需求。首先介绍了OBE的基本原理和在高等教育中的应用,然后详细探讨了如何在“食品化学”课程中应用OBE模式,包括课程设计、评估方法、教学资源等方面的改进,最后总结了基于OBE模式的“食品化学”课程教学方法改进的益处和挑战,以期为提高“食品化学”教育的质量和效果提供有价值的参考。The food chemistry course plays a crucial role in the field of food science and engineering.However,traditional teaching methods may face challenges such as low student interest and a disconnect between course content and practical needs.This article explores how to improve university food chemistry course teaching methods based on the Outcome-based education(OBE)model.Through the principles of OBE,it can better focus on student learning outcomes,making the course more aligned with real-world requirements.The article begins by introducing the basic principles of OBE and its application in higher education.It then delves into how OBE can be applied in the food chemistry course,including improvements in course design,assessment methods,teaching resources,and so on Finally,this article summarizes the benefits and challenges of enhancing food chemistry course teaching methods based on the OBE model,aiming to provide valuable insights for improving the quality and effectiveness of food chemistry education.
