Baseline Investigation on Production and Biosafety Level of Slaughterhouses in Cattle and Sheep Production Areas in China

摘  要:为了解当前我国牛羊屠宰场生产情况及生物安全水平,对河北等14个省份和新疆生产建设兵团的89家牛羊屠宰场点开展问卷及现场调查。结果显示;我国牛羊屠宰场集中建设在北方地区,多数场为牛羊混合屠宰,建场平均花费4420万元,运行平均花费554万元/年;2022年,单个场点平均宰牛10422头,平均产能利用率仅30.3%;平均宰羊138679只,平均产能利用率仅57.3%;屠宰场生物安全水平尚可,87%的场会定期消毒,但屠宰员工生物安全意识有待加强,防护服等5种主要防护设施存在重复利用现象。建议政府进一步合理配置牛羊屠宰资源,提高屠宰产能利用率;同时,屠宰场应加强屠宰员工卫生宣传培训,提高其安全意识,保障人员及食品安全。本调查结果为牛羊屠宰行业高质量发展提供了数据支撑。In order to identify the production and biosafety level of cattle and sheep slaughterhouses in China,a questionnaire and on-site investigation were conducted on 89 slaughterhouses/sites in 14 provinces including Hebei and Xinjiang Production and Construction Corps.The results showed that the slaughterhouses were concentrated in northern regions,and most of them conducted mixed slaughter of cattle and sheep,with an average construction cost of about CNY 44.2 million,and an average operation cost of about CNY 5.54 million;in 2023,an average of 10422 cattle or 138679 sheep were slaughtered in each slaughterhouse/site,with average capacity utilization rates of 30.3%or 57.3%;the biosafety level of slaughterhouses was acceptable,of which 87%were regularly disinfected,but employees'awareness about biosafety was poor,and protective clothing and other main protective facilities were reused.Thus,governments were recommended to rationalize the allocation of resources for cattle and sheep slaughter to improve the capacity utilization of slaughter;meanwhile,slaughterhouses should provide their staff training about hygiene to improve their safety awareness and to protect the safety of personnel and food.The data obtained in the investigation could be used to support high-quality development of slaughter industry.
