甘草固体颗粒香料的改良及卷烟加香应用

摘  要:【目的】解决固体颗粒香料香气量小且留香时间短等问题。【方法】以甘草作为原料添加甘草浸膏及丙二醇制备改良型甘草固体香料。采用扫描电镜(SEM)及气相色谱质谱联用仪(GC-MS)分析天然甘草颗粒的表面形貌及香味成分,然后通过添加甘草浸膏和保润剂(丙二醇)增加天然甘草颗粒载香量及持香能力,利用GC-MS检测改良后样品挥发性物质总量,以挥发性物质总量为指标,优选出甘草浸膏及丙二醇的最佳添加量,并将最优添加量下得到的甘草颗粒进行卷烟加香应用。【结果】(1)天然甘草固体颗粒呈规则网状结构,比表面积较大,有利于物理吸附过程的进行;天然甘草固体颗粒中共鉴定出44种挥发性物质:酸类5种,酯类9种,萜烯类7种、酮类8种、醇类4种、醛类4种、酚类3种和其他类化合物4种;(2)增加浸膏添加量可有效增加甘草固体颗粒载香量,在浸膏添加量为4%时,香气分子吸附位点基本饱和,此时甘草固体颗粒挥发性物质总量达到456.31μg/g;(3)添加丙二醇后的甘草固体颗粒具有长久的持香效果,当丙二醇添加量为4%时,添加浸膏的甘草固体颗粒持香能力最强,在存放90 d后甘草固体颗粒挥发性物质残留量约为64.74%,较不添加丙二醇的甘草固体颗粒相比,挥发性物质保留量增加32.02%;(4)滤棒加香结果表明经甘草浸膏及丙二醇改良后的甘草固体颗粒能够明显提升卷烟的回甜感并增加一定润感;(5)甘草颗粒香料卷烟烟气分析表明,烟气致香成分中酸类及甜香挥发性物质均有不同程度的增加,进一步证明甘草颗粒添加提升了卷烟的感官品质。【结论】改良型甘草固体香料可用于卷烟滤棒加香,对开发具有特色风格的卷烟制品有良好的应用前景。[Objective]To solve the problems of low aroma content and short fragrance retention time of solid particle flavor,licorice was used as raw material and licorice extract,and propylene glycol were added to prepare an improved licorice solid flavor.[Methods]The surface morphology and flavor components of natural licorice granules were analyzed using scanning electron microscopy(SEM)and gas chromatography-mass spectrometry(GC-MS)Licorice extract and humectant(propylene glycol)were added to increase the fragrancecarrying capacity and aroma retention ability of natural licorice granules.GC-MS was used to detect the total amount of volatile substances in the improved samples.Using the total volatile substances as an indicator,the optimal addition amounts of licorice extract and propylene glycol were determined.The licorice granules obtained with the optimal additive amounts were applied in cigarette flavoring.[Results]The results showed that:1)Natural licorice granules exhibited a regular reticular structure with a large specific surface area,which facilitated the physical adsorption process.A total of 44 volatile substances were identified in natural licorice granules,including 5 acids,9 esters,7 terpenes,8 ketones,4 alcohols,4 aldehydes,3 phenols and 4 other compounds;2)Increasing the addition amount of the extract effectively increased the fragrance carrying capacity of licorice granules.When the addition amount of the extract was 4%,the adsorption sites of aroma molecules were almost saturated,and the total amount of volatile substances of licorice granules was 456.31μg/g;3)Licorice solid granules with added propylene glycol demonstrated long-lasting aroma retention.When the addition amount of propylene glycol is 4%,the licorice granules added with extract have the strongest fragrance holding ability.After 90 days of storage,the residual volatile substances in the licorice solid granules were about 64.74%,an increase of 32.02%compared to licorice solid granules without propylene glycol;4)The flavoring results of ci
