摘　　要：作为生命物质的基础,蛋白质在婴幼儿的生长发育中发挥着关键作用。母乳中含有的蛋白质具备多种生物学功能,然而当前婴幼儿配方奶粉在蛋白质组成方面与母乳仍存在明显的差异。本文对近年来的研究热点,如A2型β-酪蛋白、乳白蛋白、骨桥蛋白等对婴幼儿健康的影响,以及其在婴幼儿配方奶粉中的应用进展和未来发展趋势进行了详细的综述,旨在阐述深度母乳化活性蛋白组成和含量的婴幼儿配方奶粉设计开发的必要性和方法。As the basis of life material,protein plays a key role in the growth and development of infants and young children.The proteins contained in human milk have a variety of biological functions.However,there are still significant differences in protein composition between infant formula and human milk.In this paper,the research hotspots in recent years such as the impact of A2 type β-casein,lactalbumin,osteopontin on the health of infants and young children,as well as its application progress and future development trend in infant formula milk powder were reviewed in detail,in order to elaborate the necessity and methods of the design and development of infant formula milk powder with deep breast milk protein composition and content.
