摘 要:本研究选取8款主流品牌玉米油,分析其营养成分、潜在安全风险及理化特性,系统评价国内玉米油产品质量。研究显示:植物甾醇(平均含量7885 mg/kg)与维生素E(平均含量20.1 mgα-TE/100 g)作为玉米油中主要营养素含量丰富,而角鲨烯含量的多样性凸显了各品牌营养卖点的潜力;8款产品反式脂肪酸平均含量为1.27 g/100 g,有国家标准限量要求的苯并[a]芘与黄曲霉毒素含量均能满足标准要求,而国家标准目前并未涉及的多环芳烃(PAHs)、玉米赤霉烯酮及3-氯丙醇酯,在欧盟标准的基础上进行分析后发现均能符合后者限量要求,而缩水甘油酯的风险更大,62.5%的样品超过欧盟限量要求;所有产品的酸价与过氧化值都满足国家要求,但不同产品间差别显著。综合来看,市场上的玉米油质量安全可靠,不过各厂商在精炼技艺与污染物管理上水平不一。此外,市售玉米油的风味以甜味、烘烤及咸鲜风味为主导。In this study,8 mainstream brand corn oils were selected and their nutritional components,potential safety risks,and physical and chemical properties were analyzed to systematically assess the characteristics of corn plumule oil products.The results indicated that phytosterols(average content 7885 mg/kg)and vitamin E(average content 20.1 mgα-TE/100 g)were rich in main nutrients in corn oil,while the diversity of squalene content highlighted the potential of nutritional selling points of each brand.The average content of trans fatty acids in the 8 products was 1.27 g/100 g,and the contents of benzo[a]pyrene and aflatoxin required by the national standard limit could meet the standard requirements,while the polycyclic aromatic hydrocarbons(PAHs),zearalenone and 3-chloropropanol ester were not involved in the national standard at present.After analysis based on EU standard,it was found that all the samples could meet the limit requirements of the latter,while the risk of glycidyl ester was greater,62.5%of the samples exceeded the limit requirements of EU.The acid value and peroxide value of all products met the national requirements,but there were significant differences among different products.Overall,the quality of corn oil on the market was safe and reliable,but each manufacturer had different levels of refining technology and pollutant management.In addition,flavored corn oil was dominated by sweet,baked and salty flavors.
