摘  要:为了提高二十二碳六烯酸(DHA)纳米颗粒氧化稳定性并延长其货架期,采用Box-Behnken实验设计并结合响应面分析法以过氧化值(POV)和硫代巴比妥酸值(TBA)为响应值,从不同天然抗氧化剂和金属离子螯合剂中筛选出最优复配抗氧化剂组合。结果表明,添加质量分数0.057%迷迭香脂溶性提取物、质量分数0.034%茶多酚棕榈酸酯、质量分数0.031%D-异抗坏血酸钠和质量分数0.21%柠檬酸钠的DHA纳米颗粒氧化稳定性最好,经过7 d烘箱实验后测得POV为4.86 mmol/kg,TBA为0.21 mg/kg。利用加速氧化实验结合Arrhenius模型预测了含有最优复配抗氧化剂DHA纳米颗粒的货架期,其货架期是空白样品的7倍。The investigation was centered on augmenting oxidative stability and prolonging the shelf life of docosahexaenoic acid(DHA)nanoparticles,employing a Box-Behnken experimental design coupled with response surface analysis,and utilizing peroxide value(POV)and thiobarbituric acid(TBA)as response indicators to identify the optimal combination of antioxidants derived from diverse natural sources and metal ion chelators.The experimental results revealed that DHA nanoparticles,enriched with 0.057%rosemary extract,0.034%tea polyphenol palmitate,0.031%D-sodium erythorbate,and 0.21%sodium citrate,exhibited superior oxidative stability.This was substantiated by a POV value of 9.72 mmol/kg and a TBA value of 0.21 mmol/kg,as determined through a rigorous 7-day accelerated oxidation test at 60℃.Subsequently,an accelerated oxidant test coupled with the application of the Arrhenius model facilitated the prediction of the shelf life for DHA nanoparticles incorporating the optimally formulated antioxidant blend,revealing a duration 7-fold longer than the blank sample.
