摘 要:真菌毒素污染问题已成为世界各国高度关注的食品安全热点问题,严重威胁人畜健康和生态环境安全。快速、精确的真菌毒素快速检测技术对保障食品安全有着重要意义。生物传感器具有操作简单、响应快速、灵敏度高和准确性好等优点,受到越来越多的科研工作者及社会各界人士的青睐。本文综述了近年来新型生物传感器(基于固相载体创新的生物传感器、基于识别元件创新的生物传感器和基于信号放大创新的生物传感器)在真菌毒素检测的研究进展,系统分析了各种生物传感器的构建原理、方法特点和相关应用进展,并提出了面临的挑战与发展趋势,以期为真菌毒素快速检测技术的研究提供参考和启发,同时可为保障粮食安全提供新思路。Mycotoxin contamination has become a hot issue of food safety in the world,it seriously threatens human and animal health and ecological environment safety.Rapid and accurate mycotoxin rapid detection technology is of great significance to ensure food safety.Biosensors have the advantages of simple operation,fast response,high sensitivity and good accuracy,and are favored by more and more researchers and people from all walks of life.In this paper,the research progress of new biosensors(biosensors based on solid-phase carrier innovation,biosensors based on recognition element innovation and biosensors based on signal amplification innovation)in the detection of mycotoxins in recent years was reviewed.The construction principle,method characteristics and related application progress of various biosensors were systematically analyzed,and the challenges and development trends were put forward,in order to provide reference and inspiration for the research of rapid detection technology of mycotoxins,and to provide new ideas for ensuring food security.
