摘  要:为系统分析不同饲草对东乡羊肉氨基酸和挥发性化合物的影响,本试验以小尾寒羊背最长肌为材料,分别以玉米青贮、干麦草和苜蓿作为粗饲草辅以固定配方精饲料进行饲喂,分析了三组羊肉中氨基酸种类与含量的差异及挥发性化合物之间的差异。结果表明:三组羊肉中共测出18种氨基酸,包括人体所需的8种必需氨基酸,对氨基酸含量、EAA/TAA值、EAA/NEAA值和氨基酸评分进行综合评价,其中干麦草饲料品种丰富了羊肉的蛋白品质;共检测出87种挥发性化合物,其中检出的醛类物质含量最多,主要是己醛和壬醛,且玉米青贮组最多,说明不同饲料对羊肉中挥发性化合物的影响有一定程度的差异。To systematically analyze the effects of different forages on amino acids and volatile compounds of Dongxiang mutton,their varieties of forages are roughage which includes corn silage,wheat straw and alfalfa,with fixed formula as concentrate,has determined the contents of volatile flavor compounds and the type and the content of amino acids.The results showed that three groups of the communist party have measured 18 kinds of amino acids,including 8 kinds of essential amino acids required for human body.Judging by from the amino acid content,the value of EAA/TAA and EAA/NEAA,and amino acids score,dry straw feed variety makes mutton have more abundant protein quality.Detecting a total of 87 kinds volatile compounds,most main is hexanal and nonyl aldehyde,measured the most is in the corn silage group,showing that the effects of different forages of Dongxiang mutton has a certain degree of difference.
