摘  要:近红外光谱是一种分子吸收光谱,应用范围极为广泛。近年来,我国近红外光谱分析技术发展迅速,在多个领域均取得了较好的应用效果。本文论述了当前国内外近红外光谱分析技术在食品领域的研究与应用进展,涉及近红外光谱与其他技术的联用、创新化学计量学、挖掘新鲜样本或内含物、微型近红外光谱仪应用等方面,以期为促进我国近红外光谱技术在食品检测中的应用提供一定参考。Near infrared spectroscopy is a kind of molecular absorption spectrum,which is widely used.In recent years,the near infrared spectroscopy analysis technology has developed rapidly in China,and has achieved good application results in many fields.This paper discusses the current research and application of near infrared spectroscopy in food field at home and abroad,involving the combination of near infrared and other technologies,innovative chemometrics,mining fresh samples or inclusions,applications of micro-near infrared spectrometers,etc.,in order to provide some references for promoting the application of near infrared spectroscopy in food detection in China.
