摘 要:为了科学评价邵阳绿茶的品质特性,研究收集了20份来自不同生产厂家的不同等级邵阳绿茶样品。对水提取物、茶多酚、游离氨基酸、咖啡碱生物成分及儿茶素成分的含量进行化学计量学检测与分析。结果表明,20份邵阳绿茶品质成分的平均含量为水浸出物41.48%,茶多酚27.58%,游离氨基酸4.27%,酚氨比6.68,可溶性糖5.02%,咖啡碱4.23%,体现邵阳绿茶“嫩、鲜、浓、醇”特点。通过主成分分析和聚类分析,可初步构建邵阳绿茶的质量评价模型,通过分析绿茶的生化成分来评价邵阳绿茶的质量是可行的。To scientifically evaluate the quality characteristics of Shaoyang green tea,20 samples of Shaoyang green tea from different grades and manufacturers were collected in this study.The contents of biological components such as aqueous extract,tea polyphenols,free amino acids,caffeine,and catechin components were examined and analyzed chemometrically.The results showed that the average contents of 20 Shaoyang green tea quality components were as follows:41.48%of water extract,27.58%of tea polyphenols,4.27%of free amino acids,6.68 phenol to ammonia ratio,5.02%of soluble sugar,4.23%of caffeine.Reflecting the characteristics of Shaoyang green tea“tender,fresh,strong and mellow”.Through the principal component analysis and cluster analysis,the quality evaluation model of Shaoyang green tea could be initially constructed.It was feasible to evaluate the quality of Shaoyang green tea by analyzing the biochemical components of green tea.
