摘  要:“发酵食品工艺学实验”课程是高等院校食品科学与工程专业重要的专业课程,在食品工业技术人才培养过程中发挥重要作用。开展“发酵食品工艺学实验”课程思政建设,是落实高等院校全过程全方位培养食品工业人才的重要途径。以“发酵食品工艺学实验”课程为出发点,深入挖掘、凝练实验课程中所蕴含的思政元素,从课程建设等方面开展课程思政教育探索和实践,目标是将专业课程知识点和课程思政元素有机融合,实现专业知识传授和价值观引领的同频共振、共同提升。经过课程思政的探索与实施,学生的实验课成绩和综合能力均得到提高。该研究可以为其他实验课程提供参考。The course of“Fermentation Food Technology Experiment”is an important professional course for Food Science and Engineering majors in colleges and universities,and plays an important role in the training of technical talents in food industry.The ideological and political construction of“Fermentation Food Technology Experiment”course is an important way to carry out the whole process of training food industry talents.Introduce the course of“Fermented Food Technology Experiment”as the starting point,deeply excavate and concentrate the ideological and political elements contained in the experimental course,and carry out exploration and practice of curriculum ideological and political education from the aspects of curriculum construction.The goal is to organically integrate the knowledge points of professional courses with the elements of ideological and political courses,so as to achieve the same frequency resonance and common improvement of professional knowledge impartation and value guidance.After the exploration and implementation of course-based ideological and political education,the students’experimental course grades and comprehensive abilities have improved.This study can provide reference for other experimental courses.
