潮汕粿品中脱氧雪腐镰刀菌烯醇(DON)的检测分析

摘  要:为了解潮汕粿品中脱氧雪腐镰刀菌烯醇(DON)含量及污染情况,选取潮汕地区市售的4类特色粿品,通过ELISA快速检测盒进行阳性样品初筛,若存在阳性样品,则采用免疫亲和层析净化高效液相色谱法对其中的DON含量进行测定。结果表明,4类潮汕粿品均未检测出脱氧雪腐镰刀菌烯醇。潮汕粿品受脱氧雪腐镰刀菌烯醇污染程度较低,但由于我国缺乏对米面及其制品中脱氧雪腐镰刀菌烯醇限量指标的规定,建议加强对此类食品中脱氧雪腐镰刀菌烯醇污染状况的关注。Investigate the content and contamination of fungal toxins in Chaoshan rice cakes.Commercially available four kinds of characteristic rice cakes from Chaoshan region are selected.The positive samples are screened by ELISA rapid test kit.If it has existed positive samples,the content of DON will be determined using immunoaffinity chromatography purification high performance liquid chromatography.The results show that deoxynivalenol is not detected in four kinds of characteristic rice cakes from Chaoshan region.The degree of deoxynivalenol contamination in Chaoshan rice cakes is relatively low,but due to the lack of regulations on the limit index of deoxynivalenol in rice flour and the products which are made of it in China,it is suggested that more attention should be paid to the contamination of deoxynivalenol in such food.
