摘 要:食源性致病菌是导致食源性疾病的重要因素,因此对食源性致病菌实现快速简便的检验分析具有重要意义。光谱分析技术同其他检验分析方法相比具有操作简单且快速的特点,并且同化学计量学方法结合有助于对食源性致病菌的特征信息进行识别。本文详细介绍在光谱分析中常用的化学计量学方法并分析在不同任务中每种方法的特点;综述了三种光谱技术(表面增强拉曼光谱、红外光谱以及高光谱成像技术)分别结合化学计量学方法在食源性致病菌检验分析方面的应用进展,期望能为化学计量学在光谱技术检验食源性致病菌中的进一步应用提供参考。Foodborne pathogens are a significant factor contributing to foodborne diseases,making it crucial to develop rapid and convenient methods for their detection and analysis.Among various analytical techniques,spectroscopic analysis stands out for its simplicity and speed of operation.When combined with chemometrics,spectroscopic analysis becomes even more powerful in identifying characteristic information of foodborne pathogens.This paper delves into the commonly used chemometric methods in spectroscopic analysis,analyzing the unique features of each method for different tasks.Furthermore,we comprehensively review the progress made in the application of three spectroscopic technologies—surface-enhanced Raman spectroscopy(SERS),infrared spectroscopy(IR),and hyperspectral imaging(HSI)—in conjunction with chemometric methods for the detection and analysis of foodborne pathogens.This review aims to provide insights and guidance for the further application of chemometrics in spectroscopic technologies for foodborne pathogen testing,thereby advancing the field of food safety and security.
