摘  要:研究秀珍菇采后保鲜技术对提高其商品品质和延长货架期具有重要的意义。本研究选择采前环境湿度(85%、90%)、采后物理包装方式(PE保鲜袋密封包装、OPP袋微孔透气包装和PE袋真空包装)和冷藏温度(2℃、5℃、8℃)3个因素设计正交试验,测试采后保藏6 d的秀珍菇子实体的菌盖色泽、外观完整度及质地等性状,并采用方差分析、主成分分析和性状相关性分析进行综合评价。结果表明,采前环境湿度对菌盖亮度、红绿度、完整度、黏性、内聚性和咀嚼性具有显著效应;包装方式对菌盖亮度、黄蓝度、硬度、黏性具有显著效应;冷藏温度对菌盖黄蓝度、完整度、硬度具有显著效应。最终确定冷藏温度5℃、PE袋密封包装、采前环境湿度85%为秀珍菇子实体采后最佳保鲜条件。Studying postharvest preservation techniques for Pleurotus pulmonarius is of great significance for enhancing its commercial quality and extending its shelf life.In this study,an orthogonal experiment was designed with three factors:pre-harvest environmental humidity(85%,90%),postharvest physical packaging methods(PE film sealing,vacuum packaging,and microporous breathable packaging),and refrigeration temperatures(2℃,5℃,8℃).The pileus color,appearance integrity,texture,and other traits of P.pulmonarius fruiting bodies stored for 6 days postharvest were evaluated.Comprehensive assessments were conducted using variance analysis,principal component analysis,and trait correlation analysis.The results indicated that pre-harvest environmental humidity had significant effects on pileus brightness,red-green value,integrity,stickiness,cohesiveness,and chewiness.The packaging method significantly influenced pileus brightness,yellow-blue value,hardness,and stickiness.Refrigeration temperature had significant effects on pileus yellow-blue value,integrity,and hardness.Ultimately,the optimal postharvest preservation conditions for P.pulmonarius fruiting bodies were determined to be a refrigeration temperature of 5℃,sealing with PE film,and an pre-harvest environmental humidity of 85%during pileus development.
