摘  要:植物多酚对致病菌有良好的抑菌作用,开发研究海菜花多酚(Ottelia acuminata polyphenol,OAP)对海菜花保护利用和促进经济发展具有重要意义。为探究OAP的体外抑菌能力,通过抑菌圈法评估其对4种细菌的抑菌作用,筛选对抑菌作用最敏感的菌株,并采用比浊法和琼脂平板计数法进一步确定其最小抑菌浓度(MIC),利用生理生化指标初步探讨OAP对最敏感菌株的抑菌机制。结果表明:小于2 mg·mL^(-1)剂量时OAP对单增李斯特菌(Listeria monocytogenes)、大肠埃希菌(Escherichia coil)和鼠伤寒沙门菌(Salmonella typhimurium)无抑菌作用,而对金黄色葡萄球菌(Staphylococcus aureus)抑菌作用最强,抑菌圈直径为3.6 mm,MIC为80μg·mL^(-1)。这一研究结果为OAP作为抑菌功能因子在食品加工中开发利用提供参考。Plant polyphenols exhibit strong antibacterial effects against pathogenic bacteria.The development and study of Ottelia acuminata polyphenol(OAP)are crucial for the conservation and sustainable use of O.acuminata,as well as for promoting economic development.This study aimed to assess the in vitro antibacterial activity of OAP against four bacterial species using the inhibition zone method.The most sensitive bacterial strains were identified,and the minimum inhibitory concentration(MIC)was determined using turbidimetry and agar plate counting.Physiological and biochemical assays were employed to explore the mechanism underlying the inhibitory effect of OAP on the most sensitive bacterial strains.The results indicated that OAP had no inhibitory effect on Listeria monocytogenes,Escherichia coli,and Salmonella typhimurium at concentrations below 2 mg·mL^(-1).However,OAP exhibited the strongest inhibitory effect on Staphylococcus aureus,with an inhibition zone diameter of 3.6 mm and an MIC of 80μg·mL^(-1).The results of this study provide a reference for the development and utilization of OAP as an antibacterial functional factor in food processing.
