摘 要:山楂中果胶含量丰富,为在提取过程中提高山楂果胶多糖得率,以山楂粉为原料,探究传统水提法、酸法和超高压辅助酸法3种方法对其果胶多糖得率的影响。采用单因素试验、正交试验和响应面试验研究了酸法和超高压辅助酸法这两种方法的最佳工艺条件。酸法在料液比1∶30、提取液pH值2.5、提取时间150 min、提取温度90℃的条件下提取果胶多糖得率最高,超高压辅助酸法在料液比1∶62、提取压力450 MPa、保压时间598 s的条件下提取果胶多糖得率最高。在最佳工艺条件下,酸法提取山楂果胶多糖得率为7.26%,超高压辅助酸法提取山楂果胶多糖得率为10.23%,与传统水提法相比,其得率分别提高了1.11%和4.08%。相比之下,超高压辅助酸法比传统水提法和酸法对提取山楂果胶多糖更有效,更好地提高了山楂产品的附加值。Hawthorn is rich in pectin.In order to improve the yield of hawthorn pectin polysacharides,with hawthorn powder as the raw material,the effect of traditional water extraction method,acid method and ultra-high pressure assisted acid method on the yield of pectin polysacharides is studied.The optimum process conditions of acid method and ultra-high pressure assisted acid method are studied by single factor test,orthogonal test and response surface test.Under the conditions of solid-liquid ratio of 1∶30,extraction solution pH value of 2.5,extraction time of 150 min and extraction temperature of 90℃,the yield of pectin polysaccharides extracted by acid method is the highest.Under the conditions of solid-liquid ratio of 1∶62,extraction pressure of 450 MPa and pressure holding time of 598 s,the yield of pectin polysaccharides extracted by ultra-high pressure assisted acid method is the highest.Under the optimal process conditions,the yield of hawthorn pectin polysaccharides extracted by acid method is 7.26%,and the yield of hawthorn pectin polysaccharides extracted by ultra-high pressure assisted acid method is 10.23%.Compared with traditional water extraction method,the yield increases by 1.11%and 4.08%respectively.In contrast,ultra-high pressure assisted acid method is more effective than traditional water extraction method and acid method for the extraction of hawthorn pectin polysaccharides,and the added value of hawthorn products is better improved.
