大鲵肝肽蜜制丸制备及解酒作用研究

摘　　要：为了充分利用大鲵加工副产物,以大鲵肝肽粉、葛根粉、西洋参粉为原料,制备大鲵肝肽蜜制丸,并检测其解酒作用。通过测定乙醇脱氢酶(ADH)激活率和对DPPH·、·OH和·O2-清除率,研究大鲵肝肽蜜制丸及原料体外活性,通过志愿者饮酒实验测定大鲵肝肽蜜制丸促进体内乙醇代谢的作用。结果表明:蜜制丸配方为50%大鲵肝肽、48%葛根粉、1%西洋参粉、1%薄荷,所制大鲵肝肽蜜制丸对ADH的激活率高达109.24%;对DPPH·、·OH和·O2-清除率均达85.50%以上;在饮酒前服用大鲵肝肽蜜制丸,体内乙醇的分解率提高50%,大鲵肝肽解酒蜜制丸具快速解酒作用。In order to make full use of the by-product of giant salamander processing,giant salamander liver peptide powder,pueraria powder and American ginseng powder were used as raw materials to prepare giant salamander liver peptide honey-made pills,and their anti-alcoholism effects were detected.By measuring the activation rate of alcohol dehydrogenase(ADH)and the clearance rate of DPPH·,·OH and·O 2-,the in vitro activity of giant salamander liver peptide honey-made pills and raw materials was studied.The effect of giant salamander liver peptide honey-made pills on promoting ethanol metabolism in vivo was determined by volunteer drinking test.The results showed that the formula of honey-made pills is 50%giant salamander liver peptide,48%pueraria powder,1%American ginseng powder and 1%mint.The activation rate of ADH by giant salamander liver peptide honeyed pills is as high as 109.24%.The scavenging rates of DPPH·,·OH and·O 2-are more than 85.50%.Taking giant salamander liver peptide honeyed pills before drinking,the decomposition rate of ethanol in the body increased by 50%,and the giant salamander liver peptide anti-alcohol honeyed pills has a rapid anti-alcohol effect.
