摘 要:试验旨在探究饲料中添加褐藻提取物对大口黑鲈(Micropterus salmoides)肌肉氨基酸组成的影响。试验选取630尾状态良好、体重(33.33±1.95) g的大口黑鲈,随机分为6组,每组3个重复,每个重复35尾大口黑鲈。对照组(A组)投喂基础饲料,B组、C组、D组、E组、F组分别以0.1%海藻酸钠、0.1%低聚三糖Ⅰ、0.1%低聚三糖Ⅱ、0.2%褐藻粉、0.2%褐藻粉酶解物替代基础饲料中的小麦面粉。试验期56 d。结果显示,与对照组相比,C组、D组、E组大口黑鲈肌肉中粗脂肪含量显著降低(P<0.05)。与对照组相比,各试验组的蛋氨酸(Met)含量显著提高(P<0.05),B组的赖氨酸(Lys)、异亮氨酸(Ile)、缬氨酸(Val)、苏氨酸(Thr)、亮氨酸(Leu)、天冬氨酸(Asp)、谷氨酸(Glu)、酪氨酸(Ala)含量显著下降(P<0.05)。各组大口黑鲈肌肉第一限制性氨基酸为蛋氨酸+胱氨酸(Met+Cys),第二限制性氨基酸为缬氨酸(Val)。必需氨基酸指数为E组>D组>F组>C组>B组>A组,各组F值在2.34~2.44之间。氨基酸评分和化学评分显示,与对照组相比,各组蛋氨酸+胱氨酸(Met+Cys)含量均显著提高(P<0.05)。研究表明,褐藻提取物未对大口黑鲈肌肉常规营养成分产生负面影响,几种褐藻提取物均能够提高大口黑鲈肌肉Met+Cys含量,饲料中添加0.1%海藻酸钠会导致大口黑鲈肌肉氨基酸总量下降,添加0.2%褐藻粉酶解物在一定程度上有利于提升大口黑鲈肌肉风味,褐藻提取物作为大口黑鲈饲料添加剂能够改善大口黑鲈肌肉氨基酸组成和肌肉营养价值。The experiment aimed to investigate the effects of adding brown algae extracts to feed on the amino acid composition of muscle in Micropterus salmoides.A total of 630 Micropterus salmoides with good condition and similar body weight(33.33±1.95) g were selected and randomly divided into six groups,with three replicates per group and 35Micropterus salmoides per replicate.The control group(Group A) was fed a basal diet,while Groups B,C,D,E,and F were fed diets in which wheat flour was replaced with 0.1% sodium alginate,0.1% oligosaccharide Ⅰ,0.1%oligosaccharide Ⅱ,0.2% brown algae powder,and 0.2% brown algae powder hydrolysate,respectively.The test period was 56 days.The results showed that compared to the control group,the crude fat content in the muscle of largemouth bass in Groups C,D,and E was significantly reduced(P<0.05).Compared to the control group,the methionine(Met) content in all experimental groups was significantly increased(P<0.05),while the lysine(Lys),isoleucine(Ile),valine(Val),threonine(Thr),leucine(Leu),aspartic acid(Asp),glutamic acid(Glu),and tyrosine(Tyr) contents in Group B were significantly decreased(P<0.05).The first limiting amino acid in the muscle of largemouth bass in all groups was methionine+cysteine(Met + Cys),and the second limiting amino acid was valine(Val).The essential amino acid index was in the order of Group E > Group D > Group F > Group C > Group B > Group A,with F values ranging from 2.34 to 2.44.Amino acid scoring and chemical scoring showed that compared to the control group,the content of methionine + cysteine (Met + Cys) in all Groups was significantly increased(P<0.05).The study indicated that brown alga extract does not have a negative impact on the conventional nutritional components of Micropterus salmoides muscle.Several brown alga extracts can increase the Met + Cys content in the muscle of Micropterus salmoides.Adding 0.1% sodium alginate to the feed leads to a decrease in the total amino acid content in the muscle of Micropterus salmoides.Adding 0.2% brown a
